HAPPY EASTER
...to those who celebrate! Here, finally, is the baking I've been doing!
First is the vanilla wafers dipped in chocolate!

Milk chocolate!

And two colors of white chocolate! I burned the green a bit while I was doing it, but it tastes fine. I used a makeshift double-boiler for the pink and the milk chocolate.

They taste good! They were kind of annoying to make, though. Dipping things in chocolate is actually quite tedious.
Now, the cookies! I used this recipe.
After coming out of the oven! Upon dad's suggestion, I sprinkled them with sugar even though we were going to decorate them. Also, the recipe suggested putting them in the fridge for 10-15 minutes before baking. They held their form VERY well as a result, and barely grew at all.

Right after being decorated! We ended up with no eggs after I made the dough, so I used the royal icing recipe we used at Christmas, which is basically confectionery sugar (which we had to run out at 9 to buy...oops), corn syrup and milk. The icing takes pretty much over night to harden, so here it's still very wet. Also, we were out of wax paper and parchment paper, so it's on tin foil, thus bad photos, lol. These were all decorated by Paige, Dad and I. Mom chose to...dye all the eggs herself instead (not sure what happened there, I think she was pissed at me, she left only one egg for each of us) and Derek got bored quick.
This is the icing recipe. We've found consistently though that we have to add more of the liquids than it calls for...it's not really a science, though...add more milk until it stops being a sticky, clumpy mess, and when you realize it's mixing smoothly but still too thick, add some more corn syrup. Any sort of liquid flavoring can be substituted for the almond extract, we use vanilla, you can probably also use lemon juice, whatever.

And here they are as they are right now, icing all hardened. Notice all the bubbles smoothed out while it was hardening. I love this icing!

Okay I have to run now, grandparents are here,I'll put up the recipes I used later done!
