Cutest Ever Cookie Sandwiches

I MADE TINY ADORABLE COOKIE SANDWICHES

The cookies were my standard rolled sugar cookie recipe, although I tried some new tricks this time:

I realized I had several medium-sized cookie cutters, so decided to use those.

I cut out holes in the center of half of them (kept the bottom cookies solid, for less mess). For the circles, used the ring from one of the icing bottles again; and the tiny star cutter for the star holes.

They were so much smaller than what I usually bake (and rolled out fairly thin as well) that I actually overestimated the baking time on the first batch by about a minute. They still came out fine, although one overcrisped a bit! It was tasty, just looked burnt x3


I used this buttercream filling recipe again, but this time did a bit of research and found out that when subbing almond flavor for vanilla, you should cut it in half if it's something you're not going to be baking. That explains why the taste was so strong last time...xD;
So I did a double batch of the almond-flavored buttercream, then also made a batch of chocolate-flavored, which I just kind of improvised by taking that recipe and adding half a cup of cocoa powder, then another 2 tbsp butter when it was a bit too dry.
I separated the white buttercream into five colors.

Yes, that's Snowflame. I was watching AT4W while I made the cookies. And yes, the purple looked a bit...grey...but buttercream colors darken/become richer about an hour or two after you mix them.

I'm super pleased with how they came out. And yes, they are super tasty.

Learning to make my own buttercream is one of the most exciting things that's happened to me in awhile. Not counting
beasts_and_men, who are in a league of their own re: exciting things that have happened to me. But yeah, I'm already imagining all the ways in which buttercream can be used to enhance my life. I'm planning my cookies for this Halloween already.
Also, bonus grumpy Nikka:
She likes to lay in the basket where we keep the napkins.

But yesterday there were napkins in her way. So she just stood there for awhile.

Then she scrunched up and looked pissed.

- take floury scraps after cutting out cookies and put them back in the fridge to chill for awhile and absorb the extra flour before rolling it out again (tastier, nicer-looking end-batch cookies!)
- chill cookies for 15 minutes rather than just 10 before baking (the cookies keep their shape pretty much perfectly!)

It only takes like five or six minutes to mix, and you can pipe it on if you want to be fancy but I literally just grabbed a knife and smeared it on the cookies for this xD clean-up is pretty easy too, if you're not stupid like me and don't get powdered sugar all over the kitchen xDDDD
